Escabeche (Macau Style)


1 kilo Saragani Bay Pompano

1 carrot, medium, cut into strips

1 large red pepper, cut into strips

salt and vetsin

2 cloves garlic

2 tbsp sweet pickle

2 stalks celery, diced

2 inches ginger, cut into strips

1 medium onion

3 tbsp oil


Clean and scale fish.

Add salt and fry, and then set aside.

Sauté garlic and onion.

Add water and let it boil.

Then add all the ingredients stirring once in a while so that the mixture thickens evenly.

Add vetsin to taste.

Put fish in a platter and pour the sweet–sour sauce with vegetable over the fish.
